Blinis are super quick to make and the kids really love helping with these too. If you have friends pop over and have nothing to serve, but have flour and eggs, you can still impress with this super quick recipe.
Topping Suggestions:
Kimchi Prawn – Kimchi, Chilli Cashew cheese, prawn, fresh lime & fresh chilli.
Cranberry Turkey/Tofu – Beetroot kraut, Basil cashew cheese, fresh mint, dried cranberry and Turkey, chicken of tofu slice.
Salmon & Dill – Dill kraut, turmeric cashew cheese, smoked salmon & fresh dill.
Beetroot & Mushroom – Traditional kraut, beetroot cashew cheese, roasted mushroom or red meat & fresh thyme.
Blinis Ingredients:
- 6 eggs
- 1 cup tapioca or GF flour of choice
- 1/4 tsp sea salt.
- 1 pinch of bi-carb soda
Method:
- Set crepe maker or non stick pan to low heat to warm up.
- Place all blini ingredients into blender and blend to smooth batter.
- Use a tablespoon to measure out small disks into pan.
- Flip disks when bubbles first appear.
- Set aside to cool completely.
- Repeat unitl all batter is used.
- Assemble as in the photo with toppings listed.
