My kale waffles are a huge hit in our house. The kids love to have them with avocado and freshly squeezed lemon juice, cultured veggies and/or cultured cashew cheese.
I love them because they are super easy to make and a great way to get some leafy greens in.
They are Paleo and are free of dairy, grains, sugar, yeast, gums, soy & nuts.
Ingredients
½ bunch of your favourite kale variety
8 eggs
1 tsp bi Carb soda
4 tbsp tapioca/arrowroot starch (optional)
1 large clove of garlic
1 tsp Himalayan sea salt
1/8 tsp white pepper
3 tbsp ghee or coconut oil
Method
Turn on waffle iron to ¾ heat to warm up.
Wash kale and cut leaves from stem.
Peel and finely grate/crush garlic
Fry kale in a large fry pan on medium heat in ghee or coconut oil with the garlic until cooked and just starting to brown.
Place remaining ingredients in to a blender, blend to combine well.
Add cooked kale into blender, blend again until chopped finely but not liquefied.
Pour 1/3 cup of batter at a time into the waffle iron and cook for 4-6 minutes depending on how dry and crisp you want it. Use the back of the measuring cup to spread the mixture out to cover the entire waffle grill.
Don’t overfill the iron as it will grow during cooking.
Top with mashed avocado, cream cheese, fresh lemon juice, sauerkraut, smoked salmon or anything you have on hand.
If you don’t have a blender, just finely chop the cooked kale by hand and use a bowl and whisk to make the batter.
