Sour Citrus Jellies


These are great little treats for GAPS kids. They are firm and chewy as a whole food healing replacement to conventional sugar filled jube lollies for GAPS kids.


250ml of fresh lemon, lime and orange juice
6 Tbsp GoBio gelatin (60ml)


Start with 2 limes, 1 lemon and 1/2 orange or juice any combination of citrus to suit your taste. Add lemon for more sour or oranges / limes for more sweetness. We like them sour:).
Pass juice through a fine sieve to remove pulp.
Pour 150ml of juice into a small saucepan, add gelatin and wisk to combine, rest for a minute to soften gelatin.
Heat gently until gelatin is melted and well combined.
Allow to cool to 40 deg C.
Add remaining juice. (adding remaining juice at body temperature preserves live raw enzymes).
Pour into silicon mould and set in freezer for 10 minutes or in fridge for 30 minutes before popping out of mould.
If you only have one mould, use the freezer and a timer so you can work fast to use up mixture before it sets in the saucepan. If it does, just heat slightly to melt again.

Store in fridge.
